Broccoli and “Cheddar” Soup

Although this soup contains no actual cheddar, the flavour is amazing! Perfect for the vegan looking for a new soup to try.

Equipment:

  • One medium pot

Ingredients:

  • Flour: 1/2 cup
  • Garlic powder: 1/2 Tsp
  • Nutritional yeast: 1/2 cup
  • Salt: 2 Tsp
  • Onion powder: 1/2 Tsp
  • Non dairy milk: 1/2 cup
  • Water: 2 cups
  • Vegan butter: 2 and 1/2 Tbsp
  • Broccoli (steamed and cut): 1/2 of a head

Directions:

  • Combine all ingredients (except broccoli) in pot
  • Bring to a slight boil and allow to thicken
  • Add in the broccoli and any seasonings of your choice

Pair this yummy soup with a slice or two of brown rice bread!
