Broccoli and “Cheddar” Soup
Although this soup contains no actual cheddar, the flavour is amazing! Perfect for the vegan looking for a new soup to try.
- One medium pot
- Flour: 1/2 cup
- Garlic powder: 1/2 Tsp
- Nutritional yeast: 1/2 cup
- Salt: 2 Tsp
- Onion powder: 1/2 Tsp
- Non dairy milk: 1/2 cup
- Water: 2 cups
- Vegan butter: 2 and 1/2 Tbsp
- Broccoli (steamed and cut): 1/2 of a head
- Combine all ingredients (except broccoli) in pot
- Bring to a slight boil and allow to thicken
- Add in the broccoli and any seasonings of your choice
Pair this yummy soup with a slice or two of brown rice bread!
