Favourite Quinoa Salad

This quinoa salad recipe combines the traditional ingredients of a quinoa salad with some other, wonderfully flavourful ones! Scallops, cumin, and cayenne pepper add some real life to this salad!
Equipment:
- Large mixing bowl
- Medium saucepan
Ingredients:
- Cherry tomatoes (quartered): 6
- Carrot (diced): 1
- Garlic (minced): 2 cloves
- Celery (diced): 1 stalk
- Small cucumber (sliced): 1
- Scallion (chopped): 1
- Water: 1 and 1/2 cups
- Lemon juice: From half of a lemon
- Apple cider vinegar: 1/4 of a cup
- Olive oil: 1/4 of a cup
- Cumin: Just a dash
- Salt and pepper: To taste
- Cayenne pepper: Just a dash
- Uncooked quinoa: 3/4 of a cup
- Black beans (drained): 1 can, 15 oz
Directions:
- Bring the quinoa to a boil with the water, allowing all the water to be absorbed
- In mixing bowl, combine all of the ingredients except the quinoa and toss well
- Add in the quinoa and stir until well mixed, adding more seasoning as desired
Favourite Quinoa Salad is perfect by itself as a meal or snack, but if you like spicy then we recommend you try adding a little hot sauce in!
