Summer Berry Quinoa Salad
Ingredients:
1 cup water
1/2 cup quinoa
1/2 c blueberries
6-8 strawberries
2 tbsp walnuts
1 tsp fresh mint
1 tbsp lemon juice
1 tsp lemon zest
1 tbsp olive oil
1/2 tsp salt
Directions: Bring water to a boil in a small sauce pan, add rinsed quinoa, reduce heat, and simmer 15-20 minutes until water has absorbed. In the meantime whisk together olive oil, lemon juice, zest, salt, and fresh mint. Toast walnuts over medium low heat until fragrant. Dice strawberries into bite sized pieces and set aside. Once quinoa has cooked toss with vinaigrette while still warm, fold in berries and nuts, serve!
