Super Veggie Nori Rolls

A delicious Nori Roll with half the carbs! This recipe relies on veggies for its superb flavour, reducing your carb intake without sacrificing flavour!

Equipment

  • One bamboo sushi rolling mat

Ingredients:

  • Nori sheets: 2
  • Carrot (julienned): 1 small to medium
  • Prepared hummus (divided): 1/2 a cup
  • Avocado (thinly sliced): 1/2 of one
  • Red bell pepper (thinly sliced): 1/2 of one
  • Cucumber (julienned): 1/2 of one
  • Alfalfa sprouts (divided): 1/2 of a cup
  • Pine nuts (divided): 2 to 4 Tbsp

Directions:

  • Place nori sheet on top of bamboo mat and spread about 1/4 of a cup of the hummus on 2/3 of the nori sheet (starting closest to you). Add 1-2 Tbsp of the pine nuts on top, followed by avocado, cucumber, carrots and red bell pepper
  • On top of veggies, place 1/4 cup of alfalfa sprouts
  • Taking the end of the nori sheet that is closest to you, roll the veggies, using the bamboo sheet to tighten the roll. Continue rolling until entire nori sheet has been rolled
  • Repeat the above steps with the second nori sheet
  • Refrigerate rolls for approx 30 minutes before cutting into individual servings
