Tasty Tofu Breakfast Scramble

Never before has tofu tasted so good! This breakfast scramble is an excellent alternative to scrambled eggs and tastier than you could imagine.

Equipment:

  • Small-medium cooking pot
  • Frying pan

Ingredients:

For the Cheese Sauce:

  • Nutritional yeast: 1/2 cup
  • Flour: 1/2 cup
  • Water: 2 cups
  • Garlic powder: 1 Tsp
  • Vegan margarine: 4 Tbsp
  • Yellow mustard: 1 Tsp

For the Stir Fry:

  • Cooking oil: As needed
  • Onion (chopped): 1/2 of one
  • Extra firm tofu (drained and crumbled): 1 lb
  • Green pepper (chopped): 1/2 of one
  • Salt and pepper: To taste

Directions:

  • For the cheese sauce: Mix the flour, yeast, and garlic powder in the pot and add water. Mix well on med heat until bubbling. Take off of the heat and add in the margarine and mustard
  • For the stir fry: Saute the onion and green pepper in the frying pan with oil. Once soft, push to the sides. Add the tofu into the center of the pan until golden, mixing in onion and peppers
  • Once the scramble looks ready to eat, pour on the cheese sauce and mix well. Cook until slightly brown

Delicious by itself, or add to your breakfast by stuffing a brown rice pita or english muffin with the scramble!
