Vegan Blue-Bran Muffins

Vegan Blue-Bran Muffins are a great recipe that use very common and healthy ingredients! In less than 30 minutes you will have a wonderful batch of blueberry and bran vegan muffins to share with everyone!
Equipment:
- Baking powder: 1 tsp
- All purpose flour: 1 cup
- Baking soda: 1 tsp
- Brown sugar: 2/3 cup
- Salt: 1/2 tsp
- Wheat bran: 1 1/2 cups
- Vanilla: 1/2 tsp
- Milk: 1 cup
- Apple sauce: 6 tbsp
- Blueberries: 3/4 cup
Ingredients:
- Baking powder: 1 tsp
- All purpose flour: 1 cup
- Baking soda: 1 tsp
- Brown sugar: 2/3 cup
- Salt: 1/2 tsp
- Wheat bran: 1 1/2 cups
- Vanilla: 1/2 tsp
- Milk: 1 cup
- Apple sauce: 6 tbsp
- Blueberries: 3/4 cup
Directions:
- Mix together the wheatbran and milk in a bowl and allow to stand for 10 minutes
- Mix together the applesauce, brown sugar, and vanilla in another bowl, then add into the wheatbran and milk
- Sift together the flour, baking powder, baking soda, and salt
- Mix the wet ingredients into the dry ones, then fold in the blueberries
- Allow to bake at 350 degrees F for about 16-20 minutes
We love adding in some chopped up walnuts!
