Vegan Blueberry Cobbler

Vegan Blueberry Cobbler takes only about 15 minutes to prepare and uses 100% vegan ingredients! For anyone with a sweet tooth, or who loves a great cobbler, this is the recipe for you!

Equipment:

  • Large cake pan
  • 2 Mixing bowls

Ingredients:

  • Sugar: 1 cup
  • Flour: 1 cup
  • Salt: 1 tsp
  • Cinnamon: 1 tsp
  • Whole wheat flour: 1 cup
  • Brown sugar: 1/2 a cup
  • Baking powder: 1 tsp
  • Lemon juice: 2 tbsp
  • Canola oil: 1/2 a cup
  • Vanilla extract: 1 tsp
  • Non dairy milk: 1 and 1/2 cups
  • Blueberries: 2 cups

Directions:

  • Preheat oven to 350 degrees F and grease the cake pan
  • Mix the sugar, baking powder, salt, and flours together in one bowl
  • Microwave the brown sugar, lemon juice, vanilla, blueberries, and cinnamon for approx 2 minutes
  • Stir the milk and oil into the dry ingredients, allowing to become smooth
  • Pour batter into the cake pan until it is about half full, then pour the blueberry mixture on top. Cover the blueberries with the rest of the batter
  • Bake for approx 45 minutes

 

Everyone knows cobbler is excellent on its own, but we recommend trying a scoop of coconut ice cream (dairy free) with it!
