Vegan Chana Masala



Vegan Chana Masala

Vegan Chana Masala is a wonderfully healthy and yummy dish that only takes abot 10 minutes to prepare! If you’re looking for a fun, spicy dish, look no further!

Equipment:

  • Large frying pan

Ingredients:

  • Salt: 1/2 tsp
  • Red pepper, crushed: As desired
  • Black pepper: As desired
  • Curry: 1 tbsp
  • Lemon juice: 1/2 a tbsp
  • Vegetable oil: 2 tbsp
  • Vegan margarine: 1 tbsp
  • Tomato paste: 1 tbsp
  • Onion (chopped): 1 med sized
  • Chickpeas (drained): 1 15 oz can (save 3 tbsp of the liquid)
  • Garlic (minced): 1 large clove

Directions:

  • Heat up the oil over medium- high heat in the frying pan, then add in onions and fry until they are brown
  • Lower heat to medium and add in the garlic, tomato paste, and curry, allowing to simmer for about 2 minutes
  • Stir in the salt, black pepper, chickpeas, chickpea liquid, and lemon juice, allowing to simmer for another 5 minutes
  • Stir in the margarine until it is melted, then stir in as much red pepper as desired. Simmer for another 5 minutes

 

Serve over rice, and enjoy! We prefer to add a little extra red pepper to really kick up the heat!
