Vegan Cream of Broccoli Soup



Vegan Cream of Broccoli Soup

Vegan-friendly, this dairy-free Cream of Broccoli Soup will warm your heart! It’s super easy to make and calls for simple yet healthy ingredients!

Equipment:

  • Blender
  • Medium cooking pot

Ingredients:

  • Salt: 1/4 tsp
  • Powdered sage: 1/2 tsp
  • Garlic powder: 1/2 tsp
  • Black pepper: 1/8 tsp
  • Quick cooking oats: 2 tbsp
  • Dried thyme: 1/2 tsp
  • Broccoli: 2 cups
  • Non-dairy milk: 1/2 cup
  • Water: 2 cups

Directions:

  • Except for the milk, combine all ingredients in the pot and bring them to a boil
  • Reduce the heat and allow to simmer for approx 5-7 minutes
  • Puree these ingredients in the blender, then add in the milk and stir

 

Try replacing the water with vegetable broth for a slightly different taste!
