Vegan Eggplant Dish

Equipment:
- Frying pan
- Small saucepan
- Paper towel
Ingredients:
- Water: 1/4 cup
- Soy sauce: 3 tbsp
- Non dairy milk: 1/2 cup
- Rice vinegar: 1 tbsp
- Oil: as needed
- Flour: 1/2 cup
- Brown sugar: 1 tbsp
- Mustard: 1 tbsp
- Red chili pepper: 1 tsp
- Cornstarch: 1/2 tsp
- Salt: to taste
- Eggplant, chopped: 1 large
Directions:
- Cover the bottom on the frying pan with oil and allow it to heat. Alternate dipping the eggplant into milk and then flour, reapeating twice and then sprinkling with salt
- Fry the eggplant until it becomes golden brown in colour
- While the eggplant is cooking: In the small saucepan, combine sugar, water, and chili and allow to boil for 3 minutes. Then add in the mustard, soy sauce, and vinegar
- Mix together cornstarch with water, then add to the sauce to thicken it
- Once eggplant is done cooking, remove it from the pan and place on the paper towel to absorb extra oil
- Cover the eggplant with the sauce before serving
Vegan Eggplant Dish is awesome on its own, but try serving it over rice for a little something extra!
