Vegan Eggplant Dish



Vegan Eggplant Dish

Equipment:

  • Frying pan
  • Small saucepan
  • Paper towel

Ingredients:

  • Water: 1/4 cup
  • Soy sauce: 3 tbsp
  • Non dairy milk: 1/2 cup
  • Rice vinegar: 1 tbsp
  • Oil: as needed
  • Flour: 1/2 cup
  • Brown sugar: 1 tbsp
  • Mustard: 1 tbsp
  • Red chili pepper: 1 tsp
  • Cornstarch: 1/2 tsp
  • Salt: to taste
  • Eggplant, chopped: 1 large

Directions:

  • Cover the bottom on the frying pan with oil and allow it to heat. Alternate dipping the eggplant into milk and then flour, reapeating twice and then sprinkling with salt
  • Fry the eggplant until it becomes golden brown in colour
  • While the eggplant is cooking: In the small saucepan, combine sugar, water, and chili and allow to boil for 3 minutes. Then add in the mustard, soy sauce, and vinegar
  • Mix together cornstarch with water, then add to the sauce to thicken it
  • Once eggplant is done cooking, remove it from the pan and place on the paper towel to absorb extra oil
  • Cover the eggplant with the sauce before serving

 

Vegan Eggplant Dish is awesome on its own, but try serving it over rice for a little something extra!
