Vegan Glazed Squash



Vegan Glazed Squash

Add this delicious recipe to your dinner list! Vegan Glazed Squash is super healthy and a great addition to a main course!

Equipment:

  • Cooking pot
  • Mixing bowl

Ingredients:

Glaze:

  • Tamari: 2 tbsp
  • Maple syrup: 1 tsp
  • Toasted sesame oil: 1 tsp
  • Cayenne pepper: just a pinch
  • Fresh ginger (minced or grated): 1 piece
  • Ground cumin: 1/4-1/2 tsp
  • Mandarin orange (zested and juiced): 1

Vegetables:

  • Onion (chopped): 1
  • Squash (peeled and cubed): 1
  • Bok choy (chopped): 1 cup
  • Mushrooms (sliced): 1 cup

 

Directions:

  • Combine the squash with water and a dash of salt in the cooking pot, then bring to a boil. Leave the lid on and reduce heat once at a boil
  • Add in the mushrooms and onion and stir well. While the vegetables are cooking, prepare the glaze by mixing all of the ingredients together in a mixing bowl
  • Allow the vegetables to become soft, then add in the bok choy, followed by the glaze. Let the sugar caramelize on the heat for a few minutes

 

This dish is best when served over some rice, pasta, or greens!
