Vegan Glazed Squash

Equipment:
- Cooking pot
- Mixing bowl
Ingredients:
Glaze:
- Tamari: 2 tbsp
- Maple syrup: 1 tsp
- Toasted sesame oil: 1 tsp
- Cayenne pepper: just a pinch
- Fresh ginger (minced or grated): 1 piece
- Ground cumin: 1/4-1/2 tsp
- Mandarin orange (zested and juiced): 1
Vegetables:
- Onion (chopped): 1
- Squash (peeled and cubed): 1
- Bok choy (chopped): 1 cup
- Mushrooms (sliced): 1 cup
Directions:
- Combine the squash with water and a dash of salt in the cooking pot, then bring to a boil. Leave the lid on and reduce heat once at a boil
- Add in the mushrooms and onion and stir well. While the vegetables are cooking, prepare the glaze by mixing all of the ingredients together in a mixing bowl
- Allow the vegetables to become soft, then add in the bok choy, followed by the glaze. Let the sugar caramelize on the heat for a few minutes
This dish is best when served over some rice, pasta, or greens!
