Vegan Lemon Thyme Biscuits

This is a very simple recipe that even the newest of chefs can handle! Vegan Lemon Thyme Biscuits are tasty additions to any dinner meal!
Equipment:
- Small mixing bowl
- Kitchen mixer
- Baking sheets
Ingredients:
- Baking powder: 2 tsp
- Salt: 1 tsp
- All purpose flour: 2 cups (extra for dusting)
- Baking soda: 1/4 tsp
- Fresh thyme: 1 tsp (extra for sprinkling)
- Non dairy milk: 1 cup
- Vegan butter, cold: 4 tbsp
- Lemon zest: 1 tsp
- Distilled white vinegar: 1 tbsp
Directions:
- Allow oven to preheat to 435 degrees Farenheit. Stir together the vinegar and milk in a small mixing bowl, then place it in the fridge
- Mix the flour, baking soda, thyme, baking powder, salt, and lemon zest in the kitchen mixer on a low setting
- Sprinkle some flour over a counter surface, then add in the butter to the ingredients in the mixer 1 tbsp at a time
- Add in the milk and vinegar, mixing well. Using 1-2 tablespoons of the dough at a time, make balls by rolling the dough over the floured surface
- Put the biscuit balls on ungreased baking sheets, then brush the top of each with water. Sprinkle a touch of salt and thyme over each ball, then bake for approx 12-15 minutes
There’s nothing better than warm biscuits! Spread some vegan margarine or butter over these when they’re fresh out of the oven!
