Vegan Quesadillas

Vegan Quesadillas are so easy to make and they taste as great as a non-vegan quesadilla might!
Equipment:
- Food processor
- Non-stick frying pan
Ingredients:
- Salt: 1/2 tsp
- Garlic powder: As desired
- Cayenne pepper: As desired
- Nutritional yeast: 1/3 of a cup
- Tomatoes (chopped): 1/2 of a cup
- White beans (rinsed and drained): 1 cup
- Whole wheat tortillas: 4
- Liquid smoke: A few drops
- Cilantro: For garnish
Directions:
- Blend the tomatoes and white beans together until they become smooth, then add in the nutritional yeast, garlic powder, cayenne pepper, salt, and liquid smoke and blend again
- Place a tortilla into the frying pan over medium-high heat, and spread a layer of the filling over it (about half of the mixture) and place another tortilla over top
- Cook each side until it appears crisp
- Cut into approx 6-8 slices before serving and top with the cilantro
Try dipping your Quesadillas in salsa for a little extra spice and flavour!

hi, i made these on saturday 5/26/12 and they were really good. i also made a batch that had seitan and green peppers and onions. fed them to my non vegan friends and their kids and they loved em. i nearly ran out of ingredients. tested it out on my dad and he had no clue it was vegan. he usually turns his nose up before even attempting to try them LOL. heres a pic i posted : http://instagr.am/p/LGSen3pZs3/
