Vegan Quinoa Sushi Rolls



Vegan Quinoa Sushi Roll

This unique alternative to traditional sushi is a great tasting way to get both carbs, protein! The quinoa grain is a complete protein as well as a healthy carb!

Equipment:

  • Frying pan
  • Medium cooking pot
  • Bamboo sushi mat
  • Large bowl

Ingredients:

  • Water or veggie broth: 2 cups
  • Vegan butter: 1 Tbsp
  • Avocado (sliced): 1
  • Salt: 1 Tsp
  • Quinoa, dry: 1 cup
  • Nori sheets: 4
  • Toasted sesame seeds: As desired

Directions:

  • Cook the quinoa in frying pan until turns light golden and then rinse it until the water is running clear
  • Cook the quinoa in the water/broth with the salt for about 15 or 20 minutes, then stir in the vegan butter. Allow to cool before moving to the large bowl, allowing to cool further
  • Laying one nori sheet on the bamboo mat, place approx 1/4 of the quinoa in a line on the edge closest to you
  • Place the avocado next to the quinoa, then top with desired amount of sesame seeds
  • Roll the nori, starting with the edge closest to you, pulling the bamboo to keep the roll tight

We love this roll with tamari mixed with a little wasabi!

    Sounds delicious! what is the difference between cooking it in the frying pan, and then the put?
