Vegan Tofu Quiche



Vegan Tofu Quiche

Perfect as an appetizer for a dinner party, or as part of the main event, Vegan Tofu Quiche is an excellent and yummy dish! If you’re looking for something fun and new to add to your vegan dinner, this is it!

Equipment:

  • Skillet
  • Blender
  • Large mixing bowl

Ingredients:

  • Medium sized onion, chopped: 1
  • Garlic, minced: 2 cloves
  • Broccoli or spinach: 1 pound
  • Firm tofu, drained: 1 pound
  • Salt: 3/4 tsp
  • Ground red pepper: 1/2 tsp
  • Dijon mustard: 1/4 tsp
  • Vegan parmesan cheese: 2 tbsp
  • Non-dairy milk: 1/2 cup
  • Ground nutmeg: 1/4 tsp
  • Pre-made vegan pie crust: 1
  • Olive Oil: As needed

Directions:

  • Allow oven to preheat to appropriate temperature for pie crust (as per package or instructions), then cook it for 12 minutes while cooking the broccoli or spinach until it becomes soft
  • Saute the onion and garlic until light brown, then add in the veggies and cook
  • Combine the milk, salt, tofu, nutmeg, mustard, pepper, and vegan cheese until it becomes smooth
  • Pour the mixture into the mixing bowl, then add in the veggies and mix well
  • Pour the new mixture into the pie shell and bake at 400 degrees F for 35-40 minutes
  • Allow to cool for 5 minutes before serving

 

We recommend making this dish twice to see if you prefer it with broccoli or spinach!
