Zucchini Banana Bread

This is one of our favourites! Zucchini Banana Bread is a true rarity in the world of vegan breads! Moist, flavourful, and healthy, this recipe is a hit with everyone who tries it.
Equipment:
- 9” bread pan
- Large mixing bowl
Ingredients:
- Sugar: 1 cup
- Flour: 1 and ½ cups
- Baking soda: ½ tbsp
- Cinnamon: ½ tbsp
- Nutmeg: 1 tsp
- Salt: ½ tsp
- Baking powder: ½ tsp
- Oil: ½ cup
- Vanilla: ½ tsp
- Grated zucchini: 1 cup
- Chopped walnuts: ¾ of a cup (optional)
- Over ripened bananas (mashed): 1 and 1/2
Directions:
- Preheat the oven to 350 degrees Farenheit and grease the bread pan lightly
- Mix together the oil, zucchini, bananas, vanilla, and sugar. If needed, use your hands to help mix in the banana chunks
- Mix in the other ingredients, ensuring the batter is well mixed
- Pour the mixture into the bread pan and allow to cook for approx 50-60 minutes
We love this bread by itself or warmed with a bit of vegan butter spread over it.
